Aníbal Plazas leads the coffee at Los Nogales, a family farm in Huila, south-west Colombia, run alongside the Hernández family. The growers here pair selective hand-picking with a lab-minded approach to post-harvest — controlled ferments, thermal-shock protocols and constant process research, which Aníbal oversees as the person responsible for quality. High in Huila's cool mountains, the farm has built a name for expressive, award-calibre lots without losing the balance that makes them so drinkable.
