Capim Seco smallholders farm in Brazil's Cerrado Mineiro, the highland savannah behind some of the country's most chocolate- and caramel-forward coffees. Cherries are sun-dried slowly on patios through the dry season, locking in the dense sweetness Brazilian naturals are loved for. Grouped as a community lot, these growers are fairly paid for coffee that punches well above its weight — brownie-and-fudge depth in the cup.
