Cesar Buesaquillo grew up in a coffee-farming family and now runs La Esmeralda, a six-hectare farm at around 1,800 metres in Buenavista, Quindío, together with his wife María and son Kevin. He is known for the heirloom Chiroso — delicate, floral and tea-like — grown high in the mountains of Inzá, Cauca, and for a steady move into rare varieties such as Pink Bourbon and Gesha. Cherries are picked glossy-ripe and dried slowly on raised beds, building the syrupy sweetness his naturals are known for.
