El Indio is a tight-knit community of farms in Colombia's Tolima region — high enough to slow the cherries, warm enough to ripen them fully. Growers pick at peak ripeness and sun-dry slowly on raised beds, giving the syrupy, fruit-forward character that natural processing is loved for. It is kept as a distinct, traceable community lot so the producers are properly paid for the work.
