Wahana Estate sits at Sidikalang in North Sumatra, on volcanic soil around 1,400 metres up that holds water like a sponge. Cherries dry on raised beds in the shade, then rest in sealed barrels for about a week — a slow anaerobic natural that builds a confection-like cup of coconut, nougat and a wash of honey.
