Jardines del Encanto sits in Colombia's Quindío region, managed by fourth-generation producer Felipe Arcila. Together with his brother Carlos, Felipe co-founded Cofinet — our import partner — continuing his family's long history in coffee with a focus on rare varieties and carefully controlled experimental processing. At around 1,900 metres, the farm's cool mountain climate encourages slow, even maturation. This lot is produced entirely from Red Gesha. Whole cherries see a short aerobic fermentation, a sealed anaerobic rest below 22°C, then a slow dry on raised beds until the moisture is exactly right.
