Jairo Arcila is one of Colombia's most experimental and respected producers — a third-generation grower who spent over forty years managing one of the country's largest mills before turning fully to his own farms around Quindío. He pushes processing in directions few would dare, and his sons Carlos and Felipe built the exporter Cofinet around lots like his. Expect ambitious co-ferments and rare varieties — Pink Bourbon, Chiroso, Sudan Rume — all kept meticulously traceable.
