This blackberries washed co-ferment from Jairo Arcila is pure purple — blackberry and blueberry up front, a scoop of boysenberry ice cream through the middle, and a soft botanical lift that keeps the whole thing composed.Ripe Castillo cherries are fermented with fresh blackberries before a careful wash and slow dry. The result is deep, berry-saturated and creamy without ever tipping into heavy. If Starburst Soda was the candy aisle, this is the berry patch at dusk.We've roasted it for filter — the brew that lets all that colour through.
