Milton Torres farms Los Cajones in Cajamarca, among the dramatic landscapes of the Peruvian Andes. His coffee reflects the country's long smallholder tradition — careful cultivation and close attention through harvest, producing cups of exceptional sweetness, balance and clarity. At around 1,800 metres, cherries mature slowly and evenly. After harvest they are carefully pulped, fermented under control and washed clean, then dried slowly to protect the coffee's delicate structure. Cofinet, our import partner, brought this lot to us.
