A light touch of lemon keeps it fresh.This Grade 1 lot from the Urabeast station in Guji is dried as whole cherry through a carefully controlled, kombucha-inspired fermentation. Naturally occurring yeasts and bacteria build layers of fruit and sweetness while the cherries dry slowly.We've roasted it for filter — soft, creamy and quietly nostalgic.
