Ryder Specialty CoffeeTablón de Gómez Single Origin Colombia Tablón de Gómez is a municipality in Colombia's Nariño department, where mountainous landscapes, volcanic soils and cool temperatures create ideal conditions for exceptional coffee. This lot is produced by small-scale farmers, typically working on just 1–2 hectares of land at altitudes between 1,500 and 2,000 metres above sea level. Around 90% of farms use shade-grown production, with coffee growing beneath fruit trees, plantain and native species. The cooler environment slows the ripening of the coffee cherries, helping to develop sweeter and more complex flavours. The coffee is carefully harvested at peak ripeness, then floated and hand-sorted before depulping and undergoing a 24-hour underwater fermentation. It is washed and slowly dried on raised beds for around 20–25 days. Cofinet works closely with producers and local associations in the region, supporting traceability and long-term relationships.
